Safely Preserving Foods Using Pressure Canners
During this time of year, most gardens come to harvest. Often, gardeners are left with a large surplus of vegetables that just can not be eaten when they are ripe. For this reason, most gardeners are quite willing to just give away these vegetables to family and friends so they may be consumed before the they go bad. However, with a kitchen pressure canner, these vegetables may be safely preserved to be eaten at a much later time.
Preserving food is a fantastic way to enjoy all the benefits from gardening. Since most vegetables are a low acidic food, they must be preserved with a kitchen pressure canner. The pressure canner basically serves one function and that is to sterilize the food being canned. Foods, that are high in acid, don’t necessitate a pressure canner to assist in the preservation process because the acid aids with sterilization.
To preserve food, one must first have all the proper supplies. For instance, canning jars are an obvious requirement to keep the foods that are being canned. As opposed to ordinary jars, these canning jars are made with a special seal. In essence, this keeps the sterilized food free from outside contaminates.
As well as canning jars, one also needs to have a durable jar lifter to extract the canning jars from the pressure canner when ready. People which try to use a different method to remove the jars risk being burned or possibly dropping the jar and breaking the seal. The majority of jar lifters cost around ten dollars and must always be used when using a pressure canner.
Because different foods require a different canning process, it is important that people consult a canning cookbook. In many cases, new pressure canners ship with a canning manual which is helpful for people just starting with canning. Since certain foods require different canning procedures, it’s very important for people to fully understand how the foods they are canning must be preserved. Those which fail to follow correct canning methods may greatly diminish the taste of the foods which have been canned.
Prior to using the pressure canner, all of the supplies used in the canning process have to be properly cleaned. Obviously, the pressure canner and rack must be cleaned properly with soap and hot water before they are used. Canning jars, which often have sat around unused for years, need to be cleaned with soap and hot water too. By properly cleaning the supplies that are used during the canning process, individuals are able to provide a sterilized environment which is appropriate for food preservation.
Although different types of foods utilize a slightly different canning process, they all require a sanitized environment. Those that fail to follow proper canning procedures, or fail to use the appropriate equipment, risk wasting food or getting hurt. But with the right preparation, one may use their pressure canner as intended and safely preserve their vegetables to be eaten years later.
